10 Minute Meal: What’s for Dinner

Nothing brings more satisfaction than preparing a bounteous meal for your family.  But let’s face it, with much of our time spent away from home and other priorities consuming the rest of our
time, spending hours in the kitchen isn’t at the top of our list.  Before you head to your kids’ favorite drive through or schedule that pizza delivery, you can make a great tasting meal in under 10 minutes.  My favorite receipe at the moment doesn’t require multiple trips to the grocery store since most items are already stocked in your pantry.

Garlic Parmesan Sauce (Prep time 5 minutes; Serves 5)

1/2 stick of butter, 1 tablespoon of garlic powder (1/2 tablespoon of fresh garlic is even better), 1 tablespoon of white flour, 1 cup of chicken stock, 1/2 cup of half and half (whole milk is fine) and 1 cup of parmesan cheese.

Prep: On medium heat, melt the butter and garlic.  Add flour and cook on medium for 1 minute.  Add the chicken stock and half and half, whisking to avoid lumps.  As the sauce thickens, add parmesan cheese.  Continue to whisk to your desired consistency and season with salt and pepper.  

Pour over your favorite pasta.  One of my favorites is Mona’s Cheese Tortellini (cook time is 4 minutes) but it’s also delicious over Angel Hair pasta.
